Chocolate Chunky Cookies

This recipe is definitely for the notorious; the ones who like to take that short cut and believe that chocolate tastes better than love. I wonder if my mother would approve of this recipe… hmm… but its so yummy, I wanted to eat all the cookies by myself(cookie monster). The combination of chunky, slightly  gooey and chocolate will transport you to another level!

Ingredients


(You’ll get approx 25 cookies and its a one bowl, no gadget recipe)

3/4 cup castor sugar
3/4 cup brown sugar ( I like the Mawana one)
1/2 cup butter (or Nutralite)
1/2 cup yoghurt ( or 2 eggs)
1 tsp vanilla extract
1 tsp table salt (for those tiny hints of salty)
1 tsp soda bicarbonate
21/2 cups all purpose flour
1 cup cocoa powder
1 cup chocolate chips (you can also add some walnuts)
  1. Preheat the oven to 190c (this is a must).
  2. Mix together softened butter with both the sugars. Try and get rid off all those lumps.
  3. Add in the yoghurt (for the egg version, you can lightly beat the eggs and add to the sugar mixture). Mix these gently.
  4. Add in the vanilla essence (you can make these chocolate mint cookies, by adding mint essence instead), salt and the soda bicarbonate. Mix these and ensure they are no lumps.
  5. Add in the flour and the cocoa powder, and hold on.. don’t mix it too much or you’ll end up getting flat cookies!
  6. Once the flour is completely mixed into the mixture, fold in your chocolate chips.
  7. Make sure you keep a distance of atleast 1.5″ between the dollops of cookie dough.
  8. Bake them for no longer than 15 mins and voila!
